Mexican Veggie & Egg Scramble

This delicious and simple veggie & egg scramble can be put together in no time! Such a protein rich and nourishing dish that bursting with flavours of Mexicana!

Serves 1

Ingredients:

  • 1 tsp of avocado oil
  • Half of a red pepper thinly sliced
  • 1/4 onion thinly sliced
  • 1 tsp of homemade fajita seasoning (**see recipe below)
  • 2 eggs
  • 1/4 cup of cooked black beans

 

Optional

  • 1/4 of an avocado – cubed

Method:

  1. Heat up pan over medium heat. Add the avocado oil and sauté peppers and onions in pan.
  2. Add in the cooked beans with the veggie mixture and stir in the fajita seasoning.
  3. Beat eggs in bowl and pour in egg mixture with the veggies. Continue cooking eggs and stirring the eggs until cooked.
  4. Remove from heat and add cubed avocados on top to serve.

 

Fajita seasoning: 1 tsp chili powder, ½ tsp salt, ½ tsp paprika, ¼ tsp onion powder, ¼ tsp garlic powder, ¼ tsp cumin
