Zucchini Energy Bites

Looking for new ways to use your zucchini? These zucchini energy bites will not disappoint! Dairy-free, gluten-free and only 6 ingredients needed! 

Ingredients:

  • 3/4 Cup Zucchini, grated
  • 1 3/4 Cup Oats
  • 3/4 Cup Chunky Nut Butter
  • 2 Tbsp. Ground Flaxseed
  • 2 Tbsp. Honey or Maple Syrup
  • 3/4 tsp Ground Cinnamon

Method:

1. Grate zucchini. Squeeze out excess liquid.

2. Place the zucchini shreds in a large mixing bowl.Add oats, nut butter, flax seed, honey, and cinnamon to the large bowl. Stir until well combined.
3. Roll the mixture into small, bite-sized balls. Place them in a container with a lid. Keep refrigerated until ready to eat!
