✅ 1 zucchini, sliced
✅ 1 red bell pepper, sliced
✅ 1/2 red onion, sliced
✅ 1 cup cherry tomatoes, halved
✅ 2 cloves garlic, minced
✅ 1 tbsp olive oil or avocado oil (optional, for roasting)
✅ 1/2 tsp paprika
✅ 1/2 tsp cumin
✅ 1/2 tsp dried oregano
✅ Salt & pepper to taste
✅ 1/4 tsp red pepper flakes (optional, for heat)
✅ 1 tbsp fresh lemon juice
✅ Fresh cilantro or parsley for garnish
Oven-Baked Method:
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Prepare veggies – In a baking dish, toss zucchini, bell pepper, onion, and tomatoes with seasonings (except lemon juice). Spread evenly.
3️⃣ Season fish – Place Mahi Mahi fillets on top of the veggies and season with paprika, cumin, oregano, salt, and pepper.
4️⃣ Bake uncovered for 15-18 minutes, or until fish flakes easily with a fork.
5️⃣ Finish & serve – Drizzle fresh lemon juice over everything, garnish with cilantro or parsley, and enjoy!
Steaming Method (Stovetop or Steamer Basket):
1️⃣ Layer vegetables in a steamer basket over simmering water. Cover and steam for 5-7 minutes until slightly tender.
2️⃣ Add Mahi Mahi on top of the veggies, cover, and steam for another 8-10 minutes until fish is cooked through.
3️⃣ Season & serve – Sprinkle seasonings before serving and add a squeeze of lemon juice for brightness.
