In a large bowl, whisk together the eggs, honey, vanilla extract, and coconut oil until smooth.
In another bowl, mix the dry ingredients: almond flour, coconut flour (if using), baking soda, cinnamon, nutmeg, and salt.
Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped or grated apples.
Pour the batter into the prepared cake pan and spread evenly.
Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
