Easy Gluten-Free Banana Pancakes

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup gluten-free flour (such as almond flour, coconut flour, or a gluten-free all-purpose flour blend)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Cooking oil for greasing the pan (coconut oil, vegetable oil, or any oil of your choice)

Instructions:

  1. In a mixing bowl, mash the ripe bananas until smooth.

  2. Add the eggs, gluten-free flour, baking powder, vanilla extract, and a pinch of salt to the mashed bananas. Mix well until a batter forms.

  3. Heat a non-stick skillet or griddle over medium heat. Add a small amount of cooking oil to grease the surface.

  4. Spoon the pancake batter onto the heated surface, using about 1/4 cup of batter for each pancake. You can adjust the size based on your preference.

  5. Cook the pancakes until bubbles form on the surface, and the edges look set. This usually takes about 2-3 minutes.

  6. Carefully flip the pancakes and cook the other side until golden brown.

  7. Once cooked through, remove the pancakes from the pan and repeat the process with the remaining batter.

  8. Serve the gluten-free and dairy-free banana pancakes with your favorite toppings, such as sliced bananas, berries, or a drizzle of maple syrup.
