Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1.5 cups fresh/frozen corn)
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped (optional)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients:

    • Rinse and drain the black beans and corn.
    • Dice the red bell pepper and avocado.
    • Finely chop the red onion and cilantro.
    • Halve the cherry tomatoes.
    • (Optional) Seed and finely chop the jalapeño.
  2. Mix the Salad:

    • In a large bowl, combine the black beans, corn, red bell pepper, red onion, avocado, cherry tomatoes, cilantro, and jalapeño.
  3. Prepare the Dressing:

    • In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.
