No-Bake Dark Chocolate Walnut Date Bars Naturally Sweet & Delicious

Ingredients:

  • 1 ½ cups pitted Medjool dates (about 12-15)
  • 1 cup walnuts
  • ½ cup gluten-free rolled oats
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted coconut oil
  • 2 ounces dark chocolate (70% or higher), melted
  • 2 tablespoons chopped walnuts (for topping, optional)

Instructions:

  1. Prepare the Dates:

    • If the dates are dry, soak them in warm water for 10 minutes, then drain.
  2. Blend the Base:

    • In a food processor, blend walnuts and oats until finely ground.
    • Add dates, cocoa powder, sea salt, vanilla, and coconut oil.
    • Process until the mixture forms a sticky dough.
  3. Shape the Bars:

    • Line an 8x8-inch pan with parchment paper.
    • Press the mixture evenly into the pan using your hands or a spatula.
  4. Add the Chocolate Topping:

    • Pour the melted dark chocolate over the top and spread evenly.
    • Sprinkle with chopped walnuts (optional).
  5. Chill & Serve:

    • Refrigerate for at least 1 hour until firm.
