Quick No-Fry Lemon Garlic Shrimp & Broccoli
Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 2 cups broccoli florets
- 3-4 garlic cloves, minced
- 2 tbsp olive oil (or avocado oil)
- 1/4 cup gluten-free chicken or vegetable broth (or water)
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tbsp fresh lemon juice
- 1/4 tsp paprika (optional)
- Fresh parsley or cilantro for garnish

Steam the Broccoli:
- Add a small amount of water (about 1/4 cup) to a large pan or skillet and bring to a simmer over medium heat.
- Add the broccoli florets, cover with a lid, and steam for 4-5 minutes until tender but still vibrant green.
- Remove the broccoli and set aside.

Cook the Shrimp:
- In the same pan, add olive oil and minced garlic. Heat gently over medium-low heat until the garlic is fragrant but not browned (about 30 seconds).
- Add the shrimp to the pan, sprinkle with salt, pepper, and paprika (if using). Cook the shrimp gently for about 3 minutes per side until they are pink and opaque. Avoid high heat to prevent overcooking.

Combine the Shrimp and Broccoli:
- Return the steamed broccoli to the pan and stir everything together.
- Add the gluten-free broth or water to deglaze the pan and bring the dish together, letting it simmer for another minute.
- Stir in the lemon juice for brightness.
