Quick and Tasty Pesto-Crusted Salmon Recipe

Ingredients:

  • 4 salmon fillets
  • 1 cup gluten-free breadcrumbs (you can use gluten-free panko or make your own from gluten-free bread)
  • 1/2 cup grated Parmesan cheese (ensure it's gluten-free)
  • 1/2 cup pesto sauce (homemade or store-bought, just check for gluten-free certification)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Salmon: Pat the salmon fillets dry with a paper towel and place them on a baking sheet lined with parchment paper or lightly greased.

  3. Season the Salmon: Season the salmon fillets with salt and pepper to taste.

  4. Apply Pesto: Spread an even layer of pesto sauce over the top of each salmon fillet. Use a spoon to spread it evenly.

  5. Create the Crust: In a bowl, mix the gluten-free breadcrumbs and grated Parmesan cheese. Press this mixture onto the pesto-coated side of each salmon fillet, creating a crust.

  6. Drizzle with Olive Oil: Drizzle olive oil over the breadcrumb crust. This helps the crust to brown nicely and adds flavor.

  7. Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes or until the salmon is cooked through and the crust is golden brown.

  8. Serve: Carefully transfer the salmon fillets to serving plates. Serve with lemon wedges on the side for squeezing over the top.

  9. Optional Garnish: Garnish with fresh herbs, such as chopped parsley or basil, for an extra burst of flavor.

Enjoy your delicious gluten-free pesto-crusted.
