In a large pot or Dutch oven, combine all ingredients except for the parsley. Stir well to combine.
Place the pot over medium heat and bring the mixture to a simmer.
Once simmering, reduce the heat to low, cover the pot, and let it cook for 20-25 minutes, or until the rice is cooked through and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
Once the rice is cooked, remove the pot from the heat. Taste and adjust seasoning if necessary.
Serve the vegan jambalaya hot, garn
