Vegan Cacao Chia Pudding for Gluten-Free
Ingredients:
- 1/4 cup chia seeds
- 1 cup coconut milk (or any other non-dairy milk such as almond milk or soy milk)
- 2 tablespoons raw cacao powder
- 1-2 tablespoons maple syrup (adjust according to taste)
- 1/2 teaspoon vanilla extract
- Optional toppings: sliced bananas, berries, shredded coconut, chopped nuts
Instructions:
- In a mixing bowl, combine the chia seeds, coconut milk, raw cacao powder, maple syrup, and vanilla extract.
- Whisk everything together until well combined.
- Let the mixture sit for about 5 minutes, then whisk again to prevent clumping.
- Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
- Once the pudding has reached your desired consistency, give it a final stir.
- Serve the pudding in bowls or jars, and top with your favorite toppings like sliced bananas, berries, shredded coconut, or chopped nuts.
