Wholesome Tuna Patties: Gluten-Free Goodness

Ingredients:

  • 2 cans (5 oz each) tuna, drained
  • 2 eggs
  • 1/4 cup gluten-free bread crumbs (you can make your own by toasting and blending gluten-free bread)
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 2-3 tablespoons olive oil for frying

Instructions:

  1. In a mixing bowl, combine the drained tuna, eggs, gluten-free bread crumbs, chopped onion, parsley, lemon juice, Dijon mustard, salt, and pepper. Mix well until everything is evenly combined.
  2. Heat olive oil in a skillet over medium heat.
  3. While the oil is heating, shape the tuna mixture into patties, using about 1/4 cup of mixture for each patty.
  4. Once the oil is hot, carefully place the patties in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and heated through.
  5. Once cooked, remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
  6. Serve the tuna patties hot, with your favorite dipping sauce or alongside a salad for a complete meal.
