Wholesome Tuna Patties: Gluten-Free Goodness
Ingredients:
- 2 cans (5 oz each) tuna, drained
- 2 eggs
- 1/4 cup gluten-free bread crumbs (you can make your own by toasting and blending gluten-free bread)
- 1/4 cup finely chopped onion
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 2-3 tablespoons olive oil for frying
Instructions:
- In a mixing bowl, combine the drained tuna, eggs, gluten-free bread crumbs, chopped onion, parsley, lemon juice, Dijon mustard, salt, and pepper. Mix well until everything is evenly combined.
- Heat olive oil in a skillet over medium heat.
- While the oil is heating, shape the tuna mixture into patties, using about 1/4 cup of mixture for each patty.
- Once the oil is hot, carefully place the patties in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and heated through.
- Once cooked, remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
- Serve the tuna patties hot, with your favorite dipping sauce or alongside a salad for a complete meal.
