Banana Oat Muffins

These muffins only need 6 ingredients and are sure to be a hit with the entire family! They can be made vegan by replacing the egg whites with chia egg. Add in chocolate chips for an extra sweet treat!

Makes 21-24 muffins

Ingredients: 

  • 5 ripe bananas, mashed
  • 3/4 cup egg whites or chia egg (by using ground egg and water - ratio is 1 tbsp of chia seeds with 3 tbsp water)
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 3 cups rolled oats
  • 1/2 cup chocolate chips (optional)

Method:

 1. Preheat oven to 350 degrees and prepare muffin tray with liners.

2. Mix together all of the ingredients.

4. Bake for 30 minutes or until inserted toothpick comes out clean.
