Carrot Cake Overnight Oats

These overnight oats have all of the flavours of carrot cake! A layer of oats and a layer of yogurt sweetened with maple syrup make this a great breakfast, snack or dessert! 

Ingredients:

Oats Layer:

  • 1 cup rolled oats
  • 1 and a 1/2 cup almond milk (or any milk of choice)
  • 1/4 cup carrot, grated finely
  • 1 tbsp chia seeds
  • 1 tsp cinnamon

Yogurt Layer:

  • 1/2 cup greek yogurt/coconut yogurt (if wanting dairy free)
  • 1/2 tsp vanilla
  • 1 tsp maple syrup

Makes 4 servings

Method:

1. First make up the oats layer by combining the oats, almond milk, grated carrots, chia seeds and cinnamon together and stir to combine.

2. Place all ingredients in jars that can be sealed. Refrigerate overnight.

3. Make the yogurt layer when you are ready to eat the oats. Combine the yogurt, vanilla and maple syrup together in a small bowl and spoon it on top of the oats layer. 

4. Garnish with walnuts or any other toppings you like! Enjoy!
