Coconut Curry Noodle Bowls

Soups are an amazing meal all year round! This coconut curry noodle bowl with shirataki noodles is quick to put together and can be packed with all of your favourite veggies! 

Serves 4

Ingredients:

  • 2 tbsp sesame oil
  • 2 cups of mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup green beans, ends trimmed
  • 3-4 carrots, peeled and cut into small pieces
  • 1 inch knob ginger, peeled and minced
  • 1 tsp curry powder
  • 2 tbsp soy sauce
  • 1 tsp red curry paste
  • 1 can coconut milk
  • 5 cups vegetable broth (or water can work!)
  • 2 packages of shirataki noodles
  • salt and pepper to taste
  • squeeze of lime juice

Method:

1. Heat the oil in a large pot and add the mushrooms, carrots and green beans (and any other veggies you wish!). Saute for 5-6 minutes or until soft. Add garlic, ginger, curry powder, red curry paste and soy sauce. Saute for another few minutes.

2. Add in the coconut milk and broth and bring to a simmer. Add in the shirataki noodles.

3. Season with salt and pepper and a squeeze of lime juice. Enjoy!
