Everything from the Market Salad

The possibilities really are endless when it comes to what can go in a salad! I love switching up the ingredients and mixing and matching ingredients and textures that wouldn't always traditionally go together! My son named this salad the Everything from the Market Salad after coming home with our vegetable basket the other weekend.  This can be made as a side salad or as a complete meal by adding in your favourite protein - chicken or roasted chickpeas would go great in this salad!

Serves 1

Ingredients:

Salad:

  • Mix of swiss chard and romaine lettuce
  • 1-2  beets, peeled and roasted
  • 1 tsp grapeseed oil, for roasting beets
  • 5-6  local strawberries, sliced
  • 1 avocado, diced
  • handful of walnuts
  • 1-2 tbsp hemp seeds
  • Tops of fennel (fronds), sprinkled on salad

Dressing:

  • 2 tbsp good quality olive oil
  • 1 tsp apple cider vinegar
  • 1/2 tsp honey
  • 1/2 tsp dijon mustard

Method:

1. First prepare roasted beets. Peel and quarter them and drizzle with some grapesed oil and salt. Roast them at 350 degrees for around 40 minutes until they reach desired softness. Allow to cool before adding into salad.

2. Chop and prepare the remaining salad ingredients and whisk together the dressing ingredients.

3. Add in any protein you like to make this into a complete meal! Enjoy!
