Garlic Scapes and Green Beans

Garlic scapes are an amazing summertime side vegetable! They boast a mild yet flavourful garlic taste and are amazing when sauteed in a skillet or on the BBQ! The mixture of sauteed garlic scapes and green beans has quickly become a new favourite side dish!

Serves 4

Ingredients:

  • 2-3 cups of green beans, ends trimmed
  • 1 bunch of garlic scapes, bulbs removed and ends trimmed
  • Avocado oil, for pan
  • Sprinkle of sea salt

Method:

1. Wash and remove ends of green beans and set aside.

2. Wash and remove ends of the garlic scapes. First, remove the bulbs on the one end. Next, feel on the other end for where the "woody" part of the stem is (similar to asparagus) and remove that portion.

3. Heat oil in pan over medium heat and and sautee the green beans and garlic scape for approximately 8-10 minutes or until desired tenderness.

4. Sprinkle with sea salt and enjoy warm!
