Hearty Italian Minestrone Soup

A complete meal in one bowl! Full of veggies, potatoes and beans this hearty soup is the perfect comfort food when you're looking to warm you up. Give it a try!

Salad Ingredients:

  • 2 Carrots peeled and chopped
  • 2 Celery stalks, diced
  • 1 small yellow onion, chopped 
  • 2 Yukon Gold or Red Potatoes, cut in small cubes
  • 4 garlic cloves, minced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 15oz can crushed tomatoes
  • 6 cups vegetable broth
  • 1 15oz can Kidney Beans
  • Rosemary, Thyme and Bay Leaves for seasoning, if you have
  • Salt & Pepper
  • 2 Tablespoons Olive Oil

Method:

1. Heat the Olive oil in a large cooking pot and add the onions, carrots and celery. Cook for approximately 5 mins on medium to high heat. Add the garlic and cook for another minute or so.

2. Add the Zucchini, Green Beans and potatoes. Season with Rosemary, salt and pepper.

3. Add the crushed tomatoes, broth, Bay Leaves and Thyme. Bring to a boil and reduce heat to a simmer and partially cover the pot. Simmer for about 20 minutes or so.

4. Uncover and add the kidney beans and cook for another 5 minutes.
