Mango, Avocado & Black Beans with Quinoa! So good! This salad is perfect fuel for those high intensity workout days! The flavours are amazing together and the lime vinaigrette has just the right amount of kick with some cayenne pepper! You could always throw in some jalepenos if you like more heat!

1. Rinse quinoa well and cook it according to the cooking instructions on the package. Once cooked, if you want it too cool faster the bowl can be placed in the fridge or freezer and tossed every few minutes.
2. Next, make up the vinaigrette. Whisk together the olive oil, lime juice, maple syrup, ground ginger and cayenne pepper.
3. In a large bowl, mix together the cooled down quinoa, black beans, mango, avocado, cucumber, basil and green onions. Pour over the dressing and toss well. Season with salt and pepper to taste.
This salad is best enjoyed the same day it is made! Bon appetit!
