Spiralized Zuchini Arugula & Basil

This beautiful salad is the perfect summertime side dish! Perfect for those hot days when you don't feel like cooking. The fresh basil gives this salad an amazing pop of flavour! If you do not have a spiralizer, the zuchini can be cut into thin slices instead. You are going to love it!

Serves 4:

Ingredients:

  • 2 yellow zuchini, spiralized as ribbons
  • 8 fresh basil leaves, chopped finely
  • 1 cup fresh arugula, cut into pieces
  • 2 tbsp good quality olive oil
  • Salt and pepper to taste

Method:

1. Spiralize the zuchini into ribbons (or cut them into thin slices if you do not have a spiralizer).

2. Chop up the basil finely. Cut the arugula into smaller pieces.

3. In a medium bowl, toss the zuchini, basil and arugula with the olive oil.

4. Add on salt and pepper to desired taste. This salad would also taste great with a splash of lemon juice or topped with goat cheese! Enjoy!
