Sweet and Spicy Cauliflower

This sweet and spicy cauliflower is a nice way to switch it up! It would go great as a side dish or as a topping on a salad or buddah bowl!

Ingredients:

  • 1 head of cauliflower, chopped
  • Sprinkle of nutritional yeast
  • 1 1/2 tbsp sesame oil
  • knob of ginger (thumb size), grated
  • 2 garlic cloves, minced
  • 1 tbsp maple syrup
  • 1 tbsp tomato paste
  • 1/2 tsp chili garlic sauce or siracha
  • 1 tbsp tamari sauce
  • 1/2 tsp rice vinegar

1. Toss the cauliflower in the oil to coat it. Place it on the baking tray and sprinkle over the nutritional yeast to coat it. Roast the cauliflower in the oven at 400 degrees. Cook for 10 minutes and then flip the cauliflower over and finish cooking for approximately another 10 minutes.

2. Heat up the oil in the pan and saute the ginger and garlic for 3-4 minutes. Then, add in the maple syrup, tomato paste, chili garlic sauce, tamari sauce and rice vinegar.

3. Stir the sauce continually in pot until thick. Pour over baked cauliflower and enjoy warm!
