Baked Dorade with Herbs and Citrus

Ingredients:

  • 2 whole Dorade fish, gutted and scaled
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 1 orange, thinly sliced
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • Salt and pepper to taste
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Fish:

    • Rinse the Dorade fish under cold water and pat dry with paper towels. Make several diagonal cuts on both sides of each fish.
  3. Season the Fish:

    • Rub the fish inside and out with olive oil. Season the cavities generously with salt and pepper.
    • Stuff each fish cavity with minced garlic, a couple of lemon slices, orange slices, and a sprig each of rosemary and thyme.
  4. Prepare the Glaze:

    • In a small bowl, mix together the honey and Dijon mustard. Set aside.
  5. Bake the Fish:

    • Place the stuffed Dorade fish in a baking dish or on a baking sheet lined with parchment paper.
    • Brush the fish generously with the honey and mustard glaze.
  6. Bake:

    • Bake in the preheated oven for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.
  7. Serve:

    • Carefully transfer the baked Dorade fish to a serving platter.
    • Garnish with fresh parsley and serve with lemon wedges on the side.
