Baked Dorade with Herbs and Citrus
Ingredients:
- 2 whole Dorade fish, gutted and scaled
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, thinly sliced
- 1 orange, thinly sliced
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- Salt and pepper to taste
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- Lemon wedges for serving
- Fresh parsley for garnish
Instructions:

Preheat the Oven:
- Preheat your oven to 375°F (190°C).

Prepare the Fish:
- Rinse the Dorade fish under cold water and pat dry with paper towels. Make several diagonal cuts on both sides of each fish.

Season the Fish:
- Rub the fish inside and out with olive oil. Season the cavities generously with salt and pepper.
- Stuff each fish cavity with minced garlic, a couple of lemon slices, orange slices, and a sprig each of rosemary and thyme.

Prepare the Glaze:
- In a small bowl, mix together the honey and Dijon mustard. Set aside.

Bake the Fish:
- Place the stuffed Dorade fish in a baking dish or on a baking sheet lined with parchment paper.
- Brush the fish generously with the honey and mustard glaze.

- Bake in the preheated oven for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.

- Carefully transfer the baked Dorade fish to a serving platter.
- Garnish with fresh parsley and serve with lemon wedges on the side.
