Ingredients:

  • 1 tablespoon olive oil

  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup unsweetened almond milk
  • 3 tablespoons nutritional yeast
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon arrowroot powder (or cornstarch) mixed with 2 tablespoons water
  • 1/4 cup gluten-free breadcrumbs (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare Cauliflower:

    • Steam the cauliflower florets until they are just tender, about 5-7 minutes. Drain and set aside.
  3. Make the Sauce:

    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

    • Bring the mixture to a simmer, then add the arrowroot powder (or cornstarch) mixture. Cook, stirring constantly, until the sauce thickens, about 2-3 minutes.
  4. Combine and Bake:

    • Place the steamed cauliflower florets in a baking dish.
    • Pour the sauce over the cauliflower, making sure it’s evenly distributed.
    • If using, sprinkle the gluten-free breadcrumbs on top for a crispy finish.
  5. Bake:

    • Bake in the preheated oven for 20-25 minutes, or until the top is golden and the sauce is bubbly.
  6. Serve:

    • Garnish with chopped fresh parsley before serving.
