1 cup almond flour (blanched)
1/2 cup gluten-free oat flour (or more almond flour for grain-free)
1–2 tsp matcha green tea powder (culinary or ceremonial grade)
1/4 tsp baking soda
1/4 tsp sea salt
1/4 cup coconut oil (melted) or vegan butter
1/3 cup maple syrup (or honey if not strictly vegan)
1 tsp vanilla extract
Optional Add-ins:
1/4 cup dairy-free white chocolate chips or dark chocolate chips
2 tbsp chopped nuts (like macadamia or pistachio)
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together:
Almond flour
Oat flour
Matcha powder
Baking soda
Sea salt
In a separate bowl, mix:
Melted coconut oil
Maple syrup
Vanilla extract
Combine wet and dry ingredients. Stir until a dough forms. Fold in any optional add-ins.
Scoop dough (about 1.5 tbsp each) onto the baking sheet. Slightly flatten with your fingers or the back of a spoon.
Bake for 10–12 minutes, or until edges are slightly golden. Centers may look soft — that’s perfect.
Cool on the pan for 5 minutes, then transfer to a wire rack.
