Matcha Green Tea Cookies

Ingredients (makes ~12 cookies):

  • 1 cup almond flour (blanched)

  • 1/2 cup gluten-free oat flour (or more almond flour for grain-free)

  • 1–2 tsp matcha green tea powder (culinary or ceremonial grade)

  • 1/4 tsp baking soda

  • 1/4 tsp sea salt

  • 1/4 cup coconut oil (melted) or vegan butter

  • 1/3 cup maple syrup (or honey if not strictly vegan)

  • 1 tsp vanilla extract

Optional Add-ins:

  • 1/4 cup dairy-free white chocolate chips or dark chocolate chips

  • 2 tbsp chopped nuts (like macadamia or pistachio)


Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk together:

    • Almond flour

    • Oat flour

    • Matcha powder

    • Baking soda

    • Sea salt

  3. In a separate bowl, mix:

    • Melted coconut oil

    • Maple syrup

    • Vanilla extract

  4. Combine wet and dry ingredients. Stir until a dough forms. Fold in any optional add-ins.

  5. Scoop dough (about 1.5 tbsp each) onto the baking sheet. Slightly flatten with your fingers or the back of a spoon.

  6. Bake for 10–12 minutes, or until edges are slightly golden. Centers may look soft — that’s perfect.

  7. Cool on the pan for 5 minutes, then transfer to a wire rack.
