Creamy Ocean Delight: Easy Gluten-Free & Dairy-Free Seafood Chowder

Ingredients:

  • 1 pound mixed seafood (shrimp, scallops, and/or white fish), cleaned and chopped
  • 1 cup potatoes, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (gluten-free)
  • 1 cup unsweetened almond milk (or other dairy-free milk of your choice)
  • 2 tablespoons gluten-free all-purpose flour
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, combine the vegetable broth, diced potatoes, carrots, celery, onion, and garlic. Bring to a simmer over medium heat and cook until the vegetables are tender.

  2. In a small bowl, whisk together the gluten-free all-purpose flour and a small amount of water to create a slurry. Stir until smooth.

  3. Add the seafood, dried thyme, bay leaf, and the flour slurry to the pot. Stir well to combine.

  4. Allow the chowder to simmer until the seafood is cooked through and the soup has thickened slightly.

  5. Pour in the almond milk and stir until well combined. Season with salt and pepper to taste.

  6. Continue simmering for an additional 5-10 minutes, allowing the flavors to meld.

  7. Remove the bay leaf and discard.

  8. Serve the gluten-free and dairy-free seafood chowder hot, garnished with fresh chopped parsley.
