Easy Dairy-Free Broccoli Soup

Ingredients:

  • 4 cups broccoli florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 medium potato, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional, for added heat)
  • 1 tablespoon nutritional yeast (optional, for a cheesy flavor)
  • Fresh herbs for garnish (such as parsley or chives)

Instructions:

  1. Prepare the Ingredients: Wash the broccoli thoroughly and chop it into florets. Peel and dice the potato, chop the onion, and mince the garlic.

  2. Sauté Onion and Garlic: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent and fragrant, for about 3-4 minutes.

  3. Add Broccoli and Potato: Add the broccoli florets and diced potato to the pot. Stir and cook for another 2 minutes.

  4. Pour in Broth: Pour in the vegetable broth, ensuring that the broccoli and potato are mostly covered. Bring the mixture to a boil.

  5. Simmer: Once boiling, reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes or until the broccoli and potato are tender.

  6. Blend the Soup: Using an immersion blender or transferring the mixture carefully to a blender (in batches if necessary), blend the soup until smooth and creamy.

  7. Seasoning: Add salt, pepper, red pepper flakes (if using), and nutritional yeast (if using) to the blended soup. Taste and adjust seasoning as needed.

  8. Serve: Ladle the soup into bowls and garnish with fresh herbs if desired. Serve hot.
