Cook the rice: Rinse the rice thoroughly under cold water. In a medium-sized saucepan, add the rinsed rice and 2 cups of almond milk. Bring to a boil, then reduce the heat to low and simmer, covered, for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
Add flavors and sweeteners: Once the rice is tender, add the remaining 1/2 cup of almond milk, coconut cream, maple syrup, orange zest, cinnamon, cardamom (if using), and a pinch of salt. Stir well and continue to cook over low heat for another 10-15 minutes until the pudding becomes thick and creamy. Stir occasionally to prevent the rice from sticking to the bottom.
Add vanilla and almonds: Remove the pudding from heat, stir in the vanilla extract and half of the toasted almonds.
Serve: Spoon the pudding into bowls and garnish with the remaining toasted almonds and extra orange zest. You can serve it warm or chilled, depending on your preference.
