Nutty Citrus Comfort: Gluten-Free Orange Almond Rice Pudding:

Ingredients:

  • 1 cup of uncooked gluten-free rice (e.g., jasmine or basmati rice)
  • 2 1/2 cups of unsweetened almond milk (or any dairy-free milk of your choice)
  • 1/2 cup of coconut cream (for added creaminess)
  • 1/3 cup of maple syrup or agave syrup (for a refined sugar-free option)
  • Zest of 1 large orange (plus a little extra for garnish)
  • 1/4 cup of sliced almonds (toasted)
  • 1 tsp of vanilla extract
  • 1/4 tsp of ground cinnamon
  • 1/4 tsp of ground cardamom (optional)
  • A pinch of salt

Instructions:

  1. Cook the rice: Rinse the rice thoroughly under cold water. In a medium-sized saucepan, add the rinsed rice and 2 cups of almond milk. Bring to a boil, then reduce the heat to low and simmer, covered, for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

  2. Add flavors and sweeteners: Once the rice is tender, add the remaining 1/2 cup of almond milk, coconut cream, maple syrup, orange zest, cinnamon, cardamom (if using), and a pinch of salt. Stir well and continue to cook over low heat for another 10-15 minutes until the pudding becomes thick and creamy. Stir occasionally to prevent the rice from sticking to the bottom.

  3. Add vanilla and almonds: Remove the pudding from heat, stir in the vanilla extract and half of the toasted almonds.

  4. Serve: Spoon the pudding into bowls and garnish with the remaining toasted almonds and extra orange zest. You can serve it warm or chilled, depending on your preference.
