For the Squid:
4 squid steaks (cleaned and patted dry)
2 tablespoons olive oil
1 teaspoon smoked paprika (ensure gluten-free certified)
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for extra spice)
For the Spicy Garlic Sauce:
6 cloves garlic, thinly sliced
1 small red chili or 1/2 teaspoon red pepper flakes
1/3 cup olive oil
1 tablespoon fresh lemon juice
1 teaspoon sherry vinegar (or red wine vinegar, gluten-free)
2 tablespoons chopped fresh parsley
Salt to taste
Prepare the Squid Steaks:
In a small bowl, mix olive oil, smoked paprika, salt, black pepper, and cayenne.
Rub the mixture all over the squid steaks.
Let them marinate for 10–15 minutes while you prepare the sauce.
Make the Spicy Garlic Sauce:
Heat 1/3 cup olive oil in a small saucepan over medium-low heat.
Add sliced garlic and chili (or red pepper flakes).
Cook gently, stirring often, until the garlic is golden but not burnt (about 3–4 minutes).
Remove from heat. Stir in lemon juice, vinegar, parsley, and a pinch of salt. Set aside.
Cook the Squid Steaks:
Heat a large skillet, grill pan, or outdoor grill to high heat.
Cook squid steaks for about 1–2 minutes per side — they should be nicely charred but still tender. (Don't overcook or they get rubbery.)
Serve:
Arrange the squid steaks on a plate.
Spoon the spicy garlic sauce generously over the top.
Garnish with extra parsley and lemon wedges if desired.
