Spicy Tuna Bowl Recipe: Twist on Sushi

Ingredients:

For the Rice:

  • 1 cup sushi rice (or brown rice for a healthier option)
  • 1 ¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar (optional)
  • ½ teaspoon salt

For the Spicy Tuna:

  • 8 oz sushi-grade tuna, diced
  • 2 tablespoons mayonnaise (use vegan mayo for dairy-free)
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon soy sauce (use gluten-free soy sauce or tamari)
  • 1 teaspoon sesame oil (optional)
  • 1 green onion, finely chopped
  • ½ avocado, diced (optional)

For Toppings:

  • 1 small cucumber, thinly sliced
  • 1 small carrot, grated or julienned
  • 1 sheet nori, cut into strips (optional)
  • Sesame seeds
  • Additional green onions, chopped
  • Pickled ginger (optional)
  • Wasabi (optional)

Instructions:

  1. Prepare the Rice:

    • Rinse the sushi rice under cold water until the water runs clear.
    • In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed.
    • Remove from heat and let it sit covered for another 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold this mixture into the rice.
  2. Make the Spicy Tuna:

    • In a medium bowl, combine the diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, and green onion. Mix well and adjust seasoning to taste.
  3. Assemble the Bowl:

    • In a serving bowl, place a generous scoop of the prepared rice.
    • Top with the spicy tuna mixture.
    • Arrange cucumber, carrot, and avocado around the bowl.
    • Sprinkle with sesame seeds and additional green onions.
    • Add nori strips, pickled ginger, and wasabi, if desired.
  4. Serve:

    • Enjoy your Spicy Tuna Roll Bowl immediately!
