Chickpea Stir Fry with Peanut Sauce

This Chickpea Stir Fry is packed with colourful vegetables and is topped with a mouth watering peanut sauce! 

Chickpeas are a great plant based protein and the addition of the roasted broccoli was just perfect!

Serve with a side of basmati rice or quinoa to make a complete meal!

Serves 4

Stir Fry Ingredients:

  • 1 zuchini, chopped
  • 3-4 carrots, peeled and chopped
  • 1 bell pepper, chopped
  • 1 knob of ginger, grated finely
  • 1 tsp grapeseed oil, for pan
  • 1 can of chickpeas, drained and rinsed

Peanut Sauce ingredients:

  • 1/4 cup natural creamy peanut butter
  • 1/4 cup almond milk (or other plant based milk)
  • 1 tbsp tamari
  • 1 tbsp pure maple syrup
  • splash of lime (optional)

Method:

1. Chop up zuchini, carrots and bell pepper into evenly sized pieces. 

2. In a skillet, heat grape seed oil over medium heat. Stir fry the vegetables for 6-8 minutes until tender. You may add 1-2 tbsp of water into the pan half way through. 

3. Prepare peanut sauce by whisking together the peanut butter, almond milk, tamari, maple syrup and spash of lime. Set aside.

4. Add in grated ginger and stir fry in with the vegetables for another 1-2 minutes. 

5. Add the drained and rinsed chickpeas into the stir fry mixture.

6. Pour prepared peanut sauce over top of the chickpea and vegetables and continue to heat the mixture with the sauce for another 2-3 minutes. 

7. Serve the chickpea stir fry with basmati rice or quinoa and any other roasted vegetables of your choice to complete the meal.
