Crunchy Thai Kale Slaw Salad

This Crunchy Thai Salad is a great summer side salad and would be a great addition to any BBQ! There are many Kale Slaw mixes at the grocery store ready to go so it is just a matter of whipping up this super easy peanut butter dressing and tossing in some fresh chopped up veggies! To make this salad a meal, add in your favourite protein source like tempeh or chicken!

Serves 4

Ingredients:

  • 1 package of pre-packaged Kale Slaw (this one included a blend of cabbage, kale, cauliflower, brussel sprouts and broccoli)
  • Cucumber, chopped
  • Snap peas, chopped
  • Red peppers, chopped
  • Carrots, grated

Dressing:

  • 3 tbsp of natural peanut butter
  • 1 tbsp sesame oil
  • 2 tbsp gluten free Tamari sauce
  • 1 tbsp maple syrup
  • 3-4 tbsp of water to thin out dressing
  • Squeeze of a 1/4 lemon or lime juice (optional)

Method:

1. Whisk up ingredients to make the salad dressing and thin it out with 1 tbsp of water at a time until it reaches a desired consistency.

2. Chop up vegetables and mix into Kale Slaw Mix in a medium bowl. Toss the Salad with the Dressing until coated thoroughly. Enjoy!
