Almond Sparkle Cookies

Ingredients:

  • 1 1/4 cups almond flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon almond extract
  • 1 egg white
  • Sliced almonds for topping (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the almond flour, sugar, and salt.

  3. Add the almond extract and egg white to the dry ingredients. Mix well until a dough forms. The dough should hold together when pressed.

  4. Take small portions of the dough and roll them into balls (about 1 inch in diameter). Place them on the prepared baking sheet, leaving some space between each cookie.

  5. Gently press down on each cookie ball to flatten it slightly. If you'd like, press a few sliced almonds onto the top of each cookie for decoration and added texture.

  6. Bake in the preheated oven for about 10-12 minutes, or until the edges of the cookies turn golden brown.

  7. Once done, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

These almond cookies are wonderfully nutty and subtly sweet. Enjoy baking and indulging in these delightful treats!
