Cocoa-Coconut Bliss: A Simple Gluten-Free Brownie

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup coconut oil, melted
  • 1 cup coconut sugar (or any other preferred sweetener)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded unsweetened coconut

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line a baking pan with parchment paper.

  2. In a medium bowl, whisk together the gluten-free all-purpose flour, cocoa powder, baking powder, and salt. Set aside.

  3. In a separate large bowl, mix the melted coconut oil and coconut sugar until well combined.

  4. Add the eggs to the coconut oil and sugar mixture, one at a time, mixing well after each addition.

  5. Stir in the vanilla extract.

  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  7. Fold in the shredded coconut.

  8. Pour the batter into the prepared baking pan and spread it evenly.

  9. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (but not wet).

  10. Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

  11. Once cooled, cut into squares and enjoy your gluten-free and dairy-free coconut brownies!
