Deliciously Easy Honey Garlic Shrimp: Gluten-Free & Dairy-Free Delight

Ingredients:

  • 1 lb (450g) shrimp: peeled and deveined
  • 2 tbsp olive oil: or any cooking oil of your choice
  • 3 cloves garlic: minced
  • 1/4 cup honey
  • 1/4 cup coconut aminos: or gluten-free soy sauce or tamari
  • 1 tbsp lemon juice: freshly squeezed
  • 1/4 tsp red pepper flakes: optional, for a bit of heat
  • Salt and pepper: to taste
  • Green onions: chopped, for garnish
  • Sesame seeds: for garnish

Instructions:

  1. Prepare the Shrimp:

    • If using frozen shrimp, thaw them completely.
    • Pat the shrimp dry with paper towels.
  2. Make the Sauce:

    • In a small bowl, whisk together the honey, coconut aminos (or gluten-free soy sauce), lemon juice, and red pepper flakes (if using).
  3. Cook the Shrimp and Garlic:

    • Heat the olive oil in a large skillet over medium heat.
    • Add the minced garlic and cook for about 30 seconds, until fragrant.
  4. Add the Sauce:

    • Pour the sauce into the skillet with the garlic and bring it to a simmer.
    • Let the sauce cook for 1-2 minutes, until it slightly thickens.
  5. Add the Shrimp:

    • Add the shrimp to the skillet and season with a bit of salt and pepper.
    • Cook the shrimp in the sauce for about 4-5 minutes, turning them halfway through, until they are pink and opaque and the sauce is well-coated.
  6. Serve:

    • Transfer the honey garlic shrimp to a serving dish.
    • Garnish with chopped green onions and sesame seeds.
    • Serve immediately with rice, quinoa, or vegetables.

Tips:

  • Adjust sweetness and saltiness: Feel free to adjust the amount of honey and coconut aminos to suit your taste preferences.
  • Add vegetables: You can add vegetables like bell peppers, broccoli, or snap peas to the dish. Simply stir-fry them in the skillet before adding the garlic and sauce.
