Deliciously Healthy: Gluten-Free and Dairy-Free Apple Honey Cake

Ingredients

  • For the cake:

    • 2 cups almond flour
    • 1/2 cup coconut flour
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 4 large eggs
    • 1/2 cup honey (or maple syrup for a vegan option)
    • 1/4 cup coconut oil, melted (or another neutral oil)
    • 1 teaspoon vanilla extract
    • 2 cups apples, peeled, cored, and chopped (about 2 medium apples)
  • For the topping (optional):

    • 1/4 cup sliced almonds or walnuts
    • 1 teaspoon cinnamon
    • 1 tablespoon honey (optional for drizzling)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

  2. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, and salt.

  3. Combine Wet Ingredients: In another bowl, whisk together the eggs, honey, melted coconut oil, and vanilla extract until well combined.

  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped apples.

  5. Bake: Pour the batter into the prepared cake pan and smooth the top. If using, sprinkle the sliced almonds or walnuts and additional cinnamon on top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  6. Cool and Serve: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Drizzle with honey if desired before serving.
