Easy Maple-Glazed Carrots: A Gluten-Free and Dairy-Free Side Dish

Ingredients:

  • 1 pound (about 450 grams) carrots, peeled and cut into sticks or rounds
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Carrots: Peel the carrots and cut them into sticks or rounds, ensuring they are roughly the same size for even cooking.

  3. Toss with Olive Oil: In a large mixing bowl, toss the carrots with olive oil until they are evenly coated.

  4. Season the Carrots: Add salt and pepper to taste, and mix well.

  5. Arrange on Baking Sheet: Spread the carrots out in a single layer on a baking sheet lined with parchment paper or lightly greased.

  6. Bake the Carrots: Roast the carrots in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized. Stir halfway through to ensure even cooking.

  7. Prepare the Maple Glaze: While the carrots are roasting, combine the maple syrup and lemon juice in a small saucepan. Bring to a simmer over medium heat, stirring occasionally.

  8. Add Thyme (Optional): If using fresh thyme, stir it into the maple syrup mixture. This adds a nice aromatic flavor to the glaze.

  9. Glaze the Carrots: Once the carrots are done roasting, remove them from the oven and transfer them to a serving bowl. Pour the warm maple glaze over the carrots and toss gently to coat.

  10. Serve: Serve the maple-glazed carrots warm, garnished with a sprinkle of fresh thyme leaves if desired.

Enjoy your delicious gluten-free and dairy-free maple-glazed carrots!
