Easy Marinated Cherry Tomatoes

Ingredients:

  • 2 cups cherry tomatoes (halved)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar (or apple cider vinegar)
  • 1 tsp honey (or maple syrup for vegan)
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp dried basil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional: basil, parsley)

Instructions:

  1. Prepare the tomatoes: Slice the cherry tomatoes in half and place them in a medium bowl.
  2. Make the marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried oregano, dried basil, salt, and pepper.
  3. Combine: Pour the marinade over the halved tomatoes. Stir gently to coat all the tomatoes evenly.
  4. Marinate: Cover the bowl and let the tomatoes marinate in the refrigerator for at least 30 minutes, but preferably 1-2 hours for the best flavor.
  5. Serve: Garnish with fresh herbs if desired and serve as an appetizer, side dish, or topping for salads and pasta.
