Easy Marinated Cherry Tomatoes
Ingredients:
- 2 cups cherry tomatoes (halved)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar (or apple cider vinegar)
- 1 tsp honey (or maple syrup for vegan)
- 1 garlic clove, minced
- 1/2 tsp dried oregano
- 1/4 tsp dried basil
- Salt and pepper to taste
- Fresh herbs for garnish (optional: basil, parsley)
Instructions:
- Prepare the tomatoes: Slice the cherry tomatoes in half and place them in a medium bowl.
- Make the marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried oregano, dried basil, salt, and pepper.
- Combine: Pour the marinade over the halved tomatoes. Stir gently to coat all the tomatoes evenly.
- Marinate: Cover the bowl and let the tomatoes marinate in the refrigerator for at least 30 minutes, but preferably 1-2 hours for the best flavor.
- Serve: Garnish with fresh herbs if desired and serve as an appetizer, side dish, or topping for salads and pasta.
