Kale (Curly or Lacinato) – finely chopped
Purple Cabbage – shredded
Carrots – julienned or shredded
Cilantro – chopped
Green Onions – sliced thin
Toasted Sesame Seeds
Almonds or Cashews (optional) – for crunch
Tamari (gluten-free soy sauce) or Coconut Aminos
Toasted Sesame Oil
Rice Vinegar or Lime Juice
Maple Syrup or Honey
Fresh Ginger – grated
Garlic – minced
Instructions:
Prepare the kale – Remove stems, chop finely, and massage with a bit of the dressing to soften.
Mix veggies – Combine kale, cabbage, carrots, cilantro, and green onions in a large bowl.
Make the dressing – Whisk all ingredients together until smooth. Adjust seasoning to taste.
Toss & Serve – Pour dressing over the salad and mix well. Top with sesame seeds and nuts if using.
