Ingredients
For the Marinade:
- 1 large cauliflower, cut into florets
- 1 cup plain yogurt (ensure it's gluten-free)
- 1 tablespoon lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1 inch piece of ginger, grated
For the Sauce:
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch piece of ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder (adjust to taste)
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions
Marinade and Cauliflower:
- In a large bowl, mix the yogurt, lemon juice, cumin, coriander, turmeric, garam masala, paprika, salt, garlic, and ginger.
- Add the cauliflower florets to the marinade and toss to coat evenly.
- Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
Cooking the Cauliflower:
- Preheat your oven to 425°F (220°C).
- Spread the marinated cauliflower on a baking sheet lined with parchment paper.
- Roast in the oven for 25-30 minutes, until tender and slightly charred. Set aside.
Making the Sauce:
- In a large skillet or pot, heat the oil over medium heat.
- Add the chopped onions and sauté until golden brown.
- Add the garlic and ginger, cooking for another minute.
- Stir in the cumin, coriander, turmeric, garam masala, paprika, and chili powder. Cook for another 1-2 minutes until fragrant.
- Add the crushed tomatoes and cook for about 10 minutes, until the sauce thickens.
- Stir in the coconut milk and bring to a simmer.
- Add the roasted cauliflower to the sauce, mixing to coat the florets well. Cook for an additional 5-10 minutes to allow the flavors to meld.
- Season with salt to taste.
Serving:
- Garnish with fresh cilantro and serve hot with gluten-free rice or gluten-free naan bread.
