Ingredients

For the Marinade:

  • 1 large cauliflower, cut into florets
  • 1 cup plain yogurt (ensure it's gluten-free)
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated

For the Sauce:

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder (adjust to taste)
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

Marinade and Cauliflower:

  1. In a large bowl, mix the yogurt, lemon juice, cumin, coriander, turmeric, garam masala, paprika, salt, garlic, and ginger.
  2. Add the cauliflower florets to the marinade and toss to coat evenly.
  3. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

Cooking the Cauliflower:

  1. Preheat your oven to 425°F (220°C).
  2. Spread the marinated cauliflower on a baking sheet lined with parchment paper.
  3. Roast in the oven for 25-30 minutes, until tender and slightly charred. Set aside.

Making the Sauce:

  1. In a large skillet or pot, heat the oil over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Add the garlic and ginger, cooking for another minute.
  4. Stir in the cumin, coriander, turmeric, garam masala, paprika, and chili powder. Cook for another 1-2 minutes until fragrant.
  5. Add the crushed tomatoes and cook for about 10 minutes, until the sauce thickens.
  6. Stir in the coconut milk and bring to a simmer.
  7. Add the roasted cauliflower to the sauce, mixing to coat the florets well. Cook for an additional 5-10 minutes to allow the flavors to meld.
  8. Season with salt to taste.

Serving:

  1. Garnish with fresh cilantro and serve hot with gluten-free rice or gluten-free naan bread.
