Gluten-Free Delight: Sweet Potato Apple Pancakes

Ingredients:

  • 1 medium sweet potato, peeled and grated
  • 1 medium apple, peeled, cored, and grated
  • 2 flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water, let sit for 5 minutes)
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt
  • 2 tablespoons maple syrup (optional, for sweetness)
  • Coconut oil or cooking spray for greasing the pan

Instructions:

  1. In a large mixing bowl, combine the grated sweet potato and apple.

  2. In a separate bowl, prepare flax eggs by mixing ground flaxseed with water. Let it sit for 5 minutes until it forms a gel-like consistency.

  3. Add the flax eggs to the grated sweet potato and apple mixture.

  4. In the same bowl, add almond flour, coconut flour, baking powder, cinnamon, nutmeg, and a pinch of salt. Mix well to form a batter.

  5. If desired, add maple syrup for sweetness. Mix until everything is well combined.

  6. Heat a skillet or griddle over medium heat and add coconut oil or coat with cooking spray.

  7. Spoon the batter onto the skillet to form pancakes. Use the back of the spoon to flatten and shape them.

  8. Cook for 3-4 minutes on each side or until golden brown and cooked through.

  9. Serve the dairy-free sweet potato apple pancakes warm with your favorite toppings. Options include a dollop of coconut yogurt, fresh fruit, or a drizzle of maple syrup.

This version eliminates dairy by using flax eggs instead of regular eggs and suggests dairy-free alternatives for toppings. Enjoy your dairy-free Sweet Potato Apple Breakfast!
