Gluten-Free Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup gluten-free all-purpose flour (such as almond flour or a gluten-free flour blend)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 2 tablespoons chopped fresh basil (or parsley)
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Grate the zucchinis and place the grated zucchini in a colander. Sprinkle 1 teaspoon of salt over the zucchini and let it sit for 10-15 minutes to draw out excess moisture. Afterward, squeeze the zucchini into a clean kitchen towel to remove as much moisture as possible.

  2. In a mixing bowl, combine the grated zucchini, gluten-free flour, Parmesan cheese, minced garlic, beaten egg, chopped basil (or parsley), salt, and pepper. Mix until thoroughly combined.

  3. Heat a few tablespoons of olive oil in a skillet over medium-high heat.

  4. Take a spoonful of the zucchini mixture and place it in the skillet, pressing it down slightly to form a patty. Depending on the size of your skillet, you can cook 3-4 fritters at a time.

  5. Cook the fritters for about 2-3 minutes on each side, or until they turn golden brown and crispy.

  6. Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.

  7. Repeat the process until all the zucchini mixture is used, adding more oil to the skillet as needed.

  8. Serve the gluten-free zucchini fritters warm with a side of sour cream, Greek yogurt, or a dipping sauce of your choice.
