Grate the zucchinis and place the grated zucchini in a colander. Sprinkle 1 teaspoon of salt over the zucchini and let it sit for 10-15 minutes to draw out excess moisture. Afterward, squeeze the zucchini into a clean kitchen towel to remove as much moisture as possible.

In a mixing bowl, combine the grated zucchini, gluten-free flour, Parmesan cheese, minced garlic, beaten egg, chopped basil (or parsley), salt, and pepper. Mix until thoroughly combined.
