Healthy Greens, Succulent Shrimp: A Vibrant Avocado Salad

Ingredients:

  • 1 lb (450g) cooked shrimp, peeled and deveined
  • 1 avocado, diced
  • 4 cups mixed salad greens (such as spinach, arugula, and/or romaine lettuce)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled (optional)
  • Salt and pepper to taste

For the dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Prepare the shrimp: If the shrimp are not already cooked, you'll need to cook them first. You can boil them in salted water for 2-3 minutes until pink and opaque, or you can sauté them in a pan with a little olive oil until cooked through. Let them cool before using in the salad.

  2. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and pepper until well combined. Set aside.

  3. Assemble the salad: In a large bowl, combine the mixed salad greens, diced avocado, cherry tomatoes, sliced red onion, diced cucumber, and cooked shrimp. If using, sprinkle the crumbled feta cheese on top.

  4. Drizzle with dressing: Pour the dressing over the salad and gently toss everything together until evenly coated.

  5. Season to taste: Taste the salad and adjust the seasoning with more salt and pepper if needed.
