Lemon Herb-Healthy Baked Halibut
Ingredients:
- 4 halibut fillets (about 6 ounces each)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup gluten-free breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (optional)
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard (make sure it’s gluten-free)
- 1 tablespoon olive oil (for the crust)
Instructions:

Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with olive oil.

Prepare the Halibut:
- Pat the halibut fillets dry with paper towels.
- Season both sides of the fillets with salt and pepper.
- Place the fillets on the prepared baking sheet.

Make the Lemon Herb Crust:
- In a small bowl, combine the gluten-free breadcrumbs, minced garlic, parsley, dill (if using), and lemon zest.
- In another bowl, whisk together the lemon juice, Dijon mustard, and 1 tablespoon of olive oil.
- Pour the lemon juice mixture into the breadcrumb mixture, stirring until well combined.

Coat the Halibut:
- Press the lemon herb mixture onto the top of each halibut fillet, covering them evenly.

Bake the Halibut:
- Place the baking sheet in the preheated oven.
- Bake for 12-15 minutes, depending on the thickness of the fillets, until the fish is opaque and flakes easily with a fork, and the crust is golden brown.

- Remove the halibut from the oven and let it rest for a few minutes.
- Serve the halibut with a wedge of lemon and your favorite side dish.
