Lemon Herb-Healthy Baked Halibut

Ingredients:

  • 4 halibut fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup gluten-free breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard (make sure it’s gluten-free)
  • 1 tablespoon olive oil (for the crust)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the Halibut:

    • Pat the halibut fillets dry with paper towels.
    • Season both sides of the fillets with salt and pepper.
    • Place the fillets on the prepared baking sheet.
  3. Make the Lemon Herb Crust:

    • In a small bowl, combine the gluten-free breadcrumbs, minced garlic, parsley, dill (if using), and lemon zest.
    • In another bowl, whisk together the lemon juice, Dijon mustard, and 1 tablespoon of olive oil.
    • Pour the lemon juice mixture into the breadcrumb mixture, stirring until well combined.
  4. Coat the Halibut:

    • Press the lemon herb mixture onto the top of each halibut fillet, covering them evenly.
  5. Bake the Halibut:

    • Place the baking sheet in the preheated oven.
    • Bake for 12-15 minutes, depending on the thickness of the fillets, until the fish is opaque and flakes easily with a fork, and the crust is golden brown.
  6. Serve:

    • Remove the halibut from the oven and let it rest for a few minutes.
    • Serve the halibut with a wedge of lemon and your favorite side dish.
