Paleo Fish Tacos

Ingredients:

  • 1 lb white fish fillets (such as cod or tilapia)
  • 2 tablespoons coconut oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Lettuce leaves or paleo-friendly tortillas for serving
  • Sliced avocado, lime wedges, chopped cilantro for garnish

Instructions:

  1. Pat the fish fillets dry with paper towels and cut them into small pieces suitable for tacos.
  2. In a small bowl, mix together paprika, garlic powder, cumin, salt, and pepper.
  3. Sprinkle the spice mixture evenly over the fish pieces and toss to coat them well.
  4. In a large skillet, heat coconut oil over medium-high heat.
  5. Add the seasoned fish pieces to the skillet and cook for 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
  6. Once cooked, remove the fish from the skillet and set aside.

Paleo Coleslaw:

Ingredients:

  • 4 cups shredded cabbage (green, purple, or a mix)
  • 1 large carrot, grated
  • 1/4 cup paleo-friendly mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: chopped fresh herbs like parsley or cilantro

Instructions:

  1. In a large mixing bowl, combine shredded cabbage and grated carrot.
  2. In a separate smaller bowl, whisk together mayonnaise, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the cabbage and carrot mixture and toss until everything is evenly coated.
  4. Taste and adjust seasoning if necessary. Add chopped fresh herbs if desired.
  5. Refrigerate the coleslaw for at least 30 minutes before serving to allow the flavors to meld together.

Assembly:

  1. To assemble the tacos, place a few spoonfuls of the cooked fish onto a lettuce leaf or paleo-friendly tortilla.
  2. Top with a generous serving of coleslaw.
  3. Garnish with sliced avocado, lime wedges, and chopped cilantro.
