Quick & Simple Gluten-Free Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup almond flour (or chickpea flour for nut-free option)
  • 2 tablespoons tapioca starch (or cornstarch)
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon baking powder
  • 2 tablespoons fresh parsley or dill, chopped (optional)
  • 2 tablespoons olive oil (for frying)

Instructions:

  1. Prepare the zucchini – Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to draw out moisture. Squeeze out excess liquid using a clean kitchen towel.
  2. Mix ingredients – In a bowl, whisk the eggs, then add almond flour, tapioca starch, baking powder, garlic powder, black pepper, green onions, and herbs. Stir well.
  3. Combine – Fold in the grated zucchini and mix until well combined.
  4. Fry – Heat olive oil in a pan over medium heat. Scoop small portions of the batter and flatten into fritters. Cook for 3–4 minutes per side until golden brown and crispy.
  5. Serve – Enjoy with dairy-free yogurt, guacamole, or a squeeze of lemon.
