Quick and Tasty Spicy Salmon Bowl (Gluten-Free, Dairy-Free)

Ingredients:

For the Spicy Salmon:

  • 2 salmon fillets
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 tablespoon sriracha sauce (adjust according to your spice preference)
  • 1 tablespoon maple syrup or honey
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon olive oil

For the Bowl:

  • 2 cups cooked quinoa or rice (use gluten-free if needed)
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 carrot, julienned or grated
  • 1/4 cup sliced radishes
  • 2 green onions, sliced
  • Sesame seeds, for garnish
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a small bowl, whisk together the gluten-free soy sauce, sriracha sauce, maple syrup (or honey), minced garlic, grated ginger, and olive oil to make the marinade.

  3. Place the salmon fillets in a shallow dish or a resealable plastic bag and pour the marinade over them. Make sure the salmon is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.

  4. While the salmon is marinating, prepare your desired toppings for the bowl - slice the avocado, cucumber, carrot, radishes, and green onions.

  5. Once the salmon is done marinating, remove it from the fridge and place it on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

  6. While the salmon is baking, cook the quinoa or rice according to package instructions.

  7. To assemble the bowls, divide the cooked quinoa or rice among serving bowls. Top each bowl with slices of avocado, cucumber, carrot, radishes, and green onions.

  8. Once the salmon is done, remove it from the oven and flake it into large chunks. Divide the salmon evenly among the bowls.

  9. Garnish the bowls with sesame seeds and fresh cilantro. Serve with lime wedges on the side for squeezing over the bowl before eating.
