Ingredients:

- 1 large apple (Granny Smith or Honeycrisp), thinly sliced
- ¼ cup red onion, thinly sliced
- ¼ cup pecans or walnuts, toasted
- ¼ cup dried cranberries (unsweetened or sweetened, depending on preference)
- 2 tablespoons pumpkin seeds (optional)
Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar (or lemon juice)
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup or honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions:
