Sweet Treats: Gluten-Free Mango Coconut Truffle Recipe

Ingredients:

  • 1 cup dried mango, soaked in warm water for 30 minutes
  • 1 cup shredded coconut, plus extra for coating
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 3 tablespoons maple syrup or agave nectar
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Prepare Dried Mango:

    • Soak dried mango in warm water for about 30 minutes to soften it. Drain the water and pat the mango pieces dry.
  2. Blend Ingredients:

    • In a food processor, combine the soaked dried mango, shredded coconut, almond flour, coconut flour, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Blend until the mixture forms a sticky dough.
  3. Shape Truffles:

    • Using your hands, take small portions of the mixture and roll them into small truffle-sized balls.
  4. Coat with Coconut:

    • Roll each truffle in shredded coconut until well coated. Place the coated truffles on a parchment-lined tray.
  5. Chill:

    • Place the tray in the refrigerator for at least 30 minutes to allow the truffles to firm up.
  6. Serve:
