Sweet and Simple: No-Bake Strawberry Pie Delight

Ingredients:

For the Crust:

  • 1 cup almonds, soaked for at least 4 hours
  • 1 cup dates, pitted
  • A pinch of salt

For the Filling:

  • 3 cups fresh strawberries, hulled and sliced
  • 1 cup dates, soaked for at least 4 hours
  • 1 ripe banana
  • 1 tablespoon chia seeds (optional, for thickening)
  • 1 teaspoon vanilla extract

Instructions:

1. Crust:

  • Drain the soaked almonds and place them in a food processor with dates and a pinch of salt.
  • Process until the mixture becomes a sticky, crumbly texture that holds together when pressed.
  • Press the mixture into the bottom of a pie dish, creating an even crust. You can use the back of a spoon to help with this process.
  • Place the crust in the refrigerator to set while preparing the filling.

2. Filling:

  • In a blender, combine the soaked dates, ripe banana, and vanilla extract. Blend until smooth and creamy.
  • If you want a thicker consistency, add chia seeds to the filling mixture and blend again.
  • In a bowl, gently mix the sliced strawberries with the blended date and banana mixture until the strawberries are evenly coated.

3. Assembling:

  • Take the crust out of the refrigerator and pour the strawberry filling over it.
  • Spread the filling evenly using a spatula or the back of a spoon.
  • Place the pie back in the refrigerator for at least a couple of hours to allow it to set.

4. Serving:

  • Once set, slice and serve the raw vegan strawberry pie.
  • Optionally, you can garnish with additional sliced strawberries or a dusting of coconut flakes.
