Gluten-Free Healthy Taco-Stuffed Sweet Potatoes
Ingredients:
- 4 medium sweet potatoes
- 1 lb (450g) ground turkey or beef (check for gluten-free if pre-seasoned)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes, drained
- 1 packet gluten-free taco seasoning (or make your own with chili powder, cumin, paprika, oregano, garlic powder, onion powder, salt, and pepper)
- 1 avocado, sliced or diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges

- Shredded lettuce or cabbage

Preheat the oven to 400°F (200°C).

Prepare the sweet potatoes:
- Wash and dry the sweet potatoes. Pierce each one several times with a fork.
- Place the sweet potatoes on a baking sheet lined with parchment paper.
- Bake for 45-60 minutes, until they are tender when pierced with a fork.

Cook the taco filling:
- While the sweet potatoes are baking, heat a large skillet over medium heat.
- Add the ground turkey or beef and cook until browned, breaking it up as it cooks.
- Add the diced onion, garlic, and bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Stir in the taco seasoning, black beans, and diced tomatoes. Cook for another 5-7 minutes, until everything is heated through and well combined.

- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Cut each sweet potato in half lengthwise and gently fluff the insides with a fork.
