Gluten-Free Healthy Taco-Stuffed Sweet Potatoes

Ingredients:

  • 4 medium sweet potatoes
  • 1 lb (450g) ground turkey or beef (check for gluten-free if pre-seasoned)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, drained
  • 1 packet gluten-free taco seasoning (or make your own with chili powder, cumin, paprika, oregano, garlic powder, onion powder, salt, and pepper)
  • 1 avocado, sliced or diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Optional Toppings:

  • Dairy-free cheese or sour cream
  • Salsa
  • Chopped green onions
  • Shredded lettuce or cabbage

Instructions:

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the sweet potatoes:

    • Wash and dry the sweet potatoes. Pierce each one several times with a fork.
    • Place the sweet potatoes on a baking sheet lined with parchment paper.
    • Bake for 45-60 minutes, until they are tender when pierced with a fork.
  3. Cook the taco filling:

    • While the sweet potatoes are baking, heat a large skillet over medium heat.
    • Add the ground turkey or beef and cook until browned, breaking it up as it cooks.
    • Add the diced onion, garlic, and bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.
    • Stir in the taco seasoning, black beans, and diced tomatoes. Cook for another 5-7 minutes, until everything is heated through and well combined.
  4. Assemble the stuffed sweet potatoes:

    • Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
    • Cut each sweet potato in half lengthwise and gently fluff the insides with a fork.
    • Spoon the taco filling generously over each sweet potato half.
  5. Add toppings:

    • Top with avocado slices, chopped cilantro, and a squeeze of lime juice.
    • Add any additional toppings you like, such as dairy-free cheese, salsa, or shredded lettuce.
  6. Serve and enjoy!

    • Serve immediately and enjoy your delicious, healthy, and satisfying taco-stuffed sweet potatoes!
